Healthy Recipe: Cashew Cream Cheese

I've been trying to eat less dairy- which is hard for me, as noted in prior blog posts. However, this recipe was soo easy and pretty fast that I can at least start by subbing this cashew cream cheese out for the real thing.

On occasion.

Cuz lets be honest, NYC bagels and cream cheese is practically a religion.

Anyway, here goes. Try it and let us know what you think!

 

Ingredients:

1/2 pound of roasted, unsalted cashews

2 tbs Plain Greek Yogurt

2 tsp lemon juice

1/2 tsp apple cider vinegar

pinch of sea salt

1/4 cup water

 

Directions:

•Soak cashews in water for 12-24 hours

•Once fully soaked, drain cashews and place into food processor

•add pinch of sea salt, apple cider vinegar, and lemon juice and puree until mixture gets too thick to blend. Slowly add water to mixture until the mixture is super smooth and has a creamy texture. Once purred, add the yogurt and full incorporate.

Remove from cusinart and place in bowl and refrigerate overnight!

SO good! Try it spread on Mary's Gone Crackers, with our carrot spread, a cucumber slice, and capers! Or a bagel! :)
