Healthy Recipe: Faux Lox (carrot spread)

I was inspired by post of a friend who recently went to the west village to some vegan cafe and got this bagel with carrot lox which looked so good that I had to attempt to recreate some version of it myself. It's great with the cashew cream cheese recipe posted in our blog index as well!

Ingredients:

half a bag of baby carrots

1 tbs tamari

1 tbs liquid smoke

fresh dill to taste

sea salt

cracked black pepper

olive oil

squeeze of lemon

1/2 tsp of white vinegar


Directions:

Heat oven to 350 degrees and create quick marinade for carrots using the Tamari & liquid smoke, toss with carrots then put carrots into a tin foil pouch sealing completely. Steam in oven for 20 or so minutes intl the carrots are tender.

Place carrots into food processor, add remaining ingredients and blend into as smooth a mixture as possible, slightly resembling the texture of a hummus spread.

Refrigerate, it's better served chilled!
